Ingredients

  • ½ cup of rolled oats

  • 1 tbsp Chia seeds

  • 1 tbsp flax seeds

Toppings

  • 1 tbsp peanut butter

  • Sliced almonds

  • Pumpkin seeds

Preparation

  1. To a jar, add the oats, chia seeds, flax seeds, ACAI puree, maple syrup and almond milk. Shake it well to get the ingredients mix well.

  2. Refrigerate the mix overnight

  3. Transfer the mix to a serving bowl and top it with peanut butter, sliced almonds, and pumpkin seeds. You can also use fresh berries and other fruits of your choice to top.

  • 1 cup of unseeded dates

  • ½ cup Cashew butter

  • 2 tbsp coconut oil

  • ¼ cup maple syrup

  • 3 cups of rolled oats

  • ½ cup shredded coconut

  • ¼ cup blueberries

  • 1 tbsp ACAI puree

Preparation

  1. To a blender or food processor, add the dates, cashew butter, coconut oil and maple syrup. Blend it well to make a thick paste.

  2. To a bowl, add the oats, shredded coconut, blueberries, and ACAI puree. Mix it well so that the ingredients are spread even.

  3. To the mixture, add the thick paste and blend nicely. Since the paste is going to be sticky, you may use your hands to incorporate the paste evenly throughout the mixture.

  4. Transfer the mixture to a baking pan and press it down with your hands firmly as you can. You need to get it hard packed down.

  5. Freeze it for 30 minutes and once ready, you can slice it to bars.

This makes a great snack and awesome breakfast option.
